Lavender Collins

With Small Acre Gin
Ingredients

45ml Small acre
30ml Lavender & grenadine syrup 
15ml Lemon juice
30ml Soda water
2 dashes bitters
Fresh lavendar

Method

Add all ingredients to a cocktail shaker without ice. Dry shake vigorously. Add ice and shake again. Double strain into a collins glass over ice. 

Lavender & Grenadine Syrup 
Add a 1:1 Ratio of white sugar and boiling water to a pot and simmer until sugar dissolves. Add lavender and 10ml of Grenadine. Allow to cool and strain into an airtight bottle in the fridge.
