Spiced Gin Rickey

With Big Dry Gin
Ingredients

45ml Big Dry Gin
10ml Fino Sherry
15ml Honey & Ginger Syrup
Malic Acid Solution
2 slices of fresh Jalapeno
Ginger Beer
Ginger Candy
Lemon

Method

Add all but ginger beer to a cocktail shaker with ice. Shake vigorously and double strain over ice into a highball. Top with ginger beer and garnish with a fresh lemon wheel and ginger candy. 

Honey & Ginger Syrup 
Add a 1:1 Ratio of white sugar and boiling water to a pot and simmer until sugar dissolves. Add honey and fresh sliced ginger and stir through. Allow to cool, remove ginger slices and store in an airtight bottle in the fridge.
