With No.8 Botanical Gin

Ingredients

45ml No.8 Botanical Gin
15ml Honey Syrup
45ml Fresh Mandarin or Orange Juice
15ml Vanilla, Sage & Wattleseed Syrup
10-15ml Egg White or Aqua Faba (Vegan)
Ground Wattleseed

Method

Add all ingredients to a cocktail shaker without ice. Dry shake vigorously. Add ice and shake again. Double strain into a rocks glass over ice. 

Honey Syrup 
Add a 1:1 Ratio of white sugar and boiling water to a pot and simmer until sugar dissolves. Add honey and stir through. Allow to cool and strain into an airtight bottle in the fridge.

Vanilla, Sage & Wattleseed Syrup 
Add a 1:1 Ratio of white sugar and boiling water to a pot and simmer until sugar dissolves. Add Vanilla, Sage and wattleseed and stir through. Allow to cool and strain into an airtight bottle in the fridge.
